Are there any settings I can change so my phone doesn't dial with my face when talking a call?

The proximity detector is defective, or you have it blocked with a screen protector. (It's at the top of the screen [above the visible part] usually to the right of center.) That's what's supposed to turn the screen off when you're on a call.
