I'm new to android and the warning that you get when you download third party keyboards from app store has me concerned. Is there a way to know if the application is really storing keystrokes? I downloaded swift key and a native Korean keyboard.

Or am I just being paranoid?

Being mindful is ok, but nobody on the forums has complained about swift keyboard having a security issue. You can put money on the fact that if it did somebody here would say something about it.

People read those warnings and never seem to follow through on thinking things out. Even if it was storing data, how will it get data to the developer? Pay attention to whether the app has permissions to communicate as well. Most keyboard apps don't.

Learn to read and interpret the warnings. You can't just go by the names of the permissions as they don't always tell you exactly what the app is doing.
