Where do you live, work, and travel? Have you asked neighbors and coworkers how their coverage is with AT&T? That might give you an idea of how good or bad it is in the area where you'll use the network.
My only minor gripe is that at my house I only average 2 "bars", but I don't do many phone calls.
Is there a chart to help judge poor vs good signal strengths?
Att definitely works well for me. I also have a Verizon prepaid flip phone and last night the Verizon phone couldn't make or receive calls while my att phone worked fine. Att has been super reliable lately. Not saying they are perfect but the service is very good overall.
Location matters so I'm sure they stink in certain spots like all carriers do but I'm very happy with them and I travel frequently

I'm about to do something like that with my backup phone, get a cheap prepaid plan. Though I am tempted to try the LG Watch Urbane LTE on a cheap plan. With my corporate discount, it might be cheaper than prepaid.It's always good to have an extra phone on a different carrier for this reason. This is the main reason I have two. One att one Verizon. Though I don't need two smartphones, but I enjoy both iPhone (6s plus) and Android (Nexus 6P)
