automatic switch between google pay & samsung pay

i have added credit cards to both google pay and samsung pay.

do i need to manually set default to one or the other or the phone is smart enough to switch to whichever one i open at the time.

for example, i use google pay at store A, then use samsung pay at store B.

There's an option there to either force a specific payment system when using NFC or to use whatever is open at the time, so you can choose which one to use. Just remember, Google Pay doesn't support MST like SPay does, so it won't work on regular 'swipe' terminals, only on NFC-enabled ones.
