Backup Restore Smart Switch Question

It’s been a long time since I used Smart Switch so I have some questions. I have an unlocked S21 Ultra with no sim card installed yet to be put on Spectrum Mobile and a Note 8 on Verizon. I want to move everything from my Note 8 to the S21. Do I run Smart Switch before I put the sim card in the S21 or after? Also my Note 8 has an SD card installed in it will those files move over also? I am going to use the USB C to USB C cable. What else am I missing?

Smart switch on the pc will do everything you need and you don't need a sim card inserted

I like to load the SIM in the new phone prior to running Smart Switch in case I receive any texts during the whole process (which usually takes about an hour), which would still end up being in the new phone conversation threads. Since this is the first Galaxy without an SD Card, I was also curious how Smart Switch would work, but it still carried all the SD Card contents and moved them into the new phone's internal memory.

Also I believe I tried USB-C before, but found Wireless to be pretty fast as well. But I was going from an S20 to S21 and both were WiFi6 capable, so maybe that's why it went so fast this time.
