I'm not sure if you can backup your entire phone without root, but if you mean the data on your phone such as pictures, music, files, etc, you can use a cloud storage service such as Dropbox, Google Drive, Copy, Mega, or Box. Otherwise, you can just connect your phone to your PC and drag the contents to your desktop.
