You can turn off "hey Google" by going into your watch settings -> Google -> Assistant -> toggle "Hey Google" off.

Thanks for the tip. I usually tried to change these things from the Samsung gear app on my GW3 with Tizen OS. Most settings were available on the app and on the phone. Wear app on WearOS is not as functional. A lot of the settings on WearOS are only on the watch.
