HTC Sense. I've tried vanilla ROMs and launcher replacements, and they always feel like they're missing something.

I liked Sense UI a lot, even on the slower "budget" phones like the Wildfire.

The Darky's 5.2 ROM on the SGS is nice too, besides the fact that the phone absolutely seems to fly on it.
