Bloatware to disable?

removing the apps doesn't gain you any space back, so using Titanium BackUp is a good way to do it, you can freeze the apps. But over at XDA-Developers.com you will find a thread about what to freeze etc. Very useful, and always safe to freeze one at a time to make sure you are good to go.
 
If you are just talking about disabling on the phone using the stock method, you can do just about any of the ATT or Samsung apps. Do a few at time to see which affect your phone.
