Bluetooth audio and Android Auto at the same time?

Specific use case:
I have an audio app that can't be used in Android Auto as far as I know.
can I pair Bluetooth to use that app and still launch Android Auto and use Google Maps, etc., on my car's infotainment display, while controlling my audio app on the phone's display?

Yup, you can... but you'd have to exit Android Auto to control the app, defeating the purpose of Android Auto. But if I'm not mistaken, if the app registers itself as playing media (and using/showing media controls), it should show up in AA.

I thought only a small set of apps could be accessed and operated from within Android Auto. I need this app's full interface, not just a display of what it's playing. I'd need to use Google Maps or other apps on my phone, as I do currently in my non-Android Auto-equipped car if I'd have to turn off Android Auto to operate non-Android Auto apps on my phone. There are apps I can't do without. If using them means not using Android Auto, so be it. I won't be able to use Android Auto.

I'm researching a new car purchase and trying to determine if Android Auto will be useful to me.

Which app is this, if you don't mind me asking? And yeah, if the app isn't supported by AA as an app, it'll just show basic media controls. Maps, of course, are there with an AA-optimized layout, which means you don't get the full interface as the standalone Maps app, but then again, THAT'S the point of AA.
