If your looking for a BT keyboard I realy reccomend the moto xoom BT keyboard.
I have rooted my evo and I am running the nightly cyanogenmod 11 and its awesome.
I actualy using it right now to write this post. Much much better then the other one everyone talks about. This one has a very well made frame and key feedback plus it is made for our beloved ANDROID.

Is this the keyboard you are referring to?

I am running the CM7 RC2 Destroyer ROM and would love to try a BT Keyboard. Just wondering how it works in conjunction with the onscreen keyboard? If you are typing an email and you click in the box where you want to type, does the onscreen keyboard still pop up or does the BT keyboard serve as the only input option? I would love to keep the real estate that the onscreen keyboard takes when using the BT keyboard. Just wonder before I go out and drop $60. Also, how does it work for other things like games, web browser, etc...?

Initially, you seemed to say it did not work... how hard was it for you to pair this to your EVO?

I'm not seeing where the OP said it didn't initially work. Are you referring to the fact that rooting the device was required to get it to work? From what I have read about HIDs (Human Interface Device), none of the Sense ROMs (rooted or unrooted) support HIDs, so no mouse or keyboards. AOSP ROMs, like Cyanogen and MIUI, do support HIDs and will allow you to connect to them via BT. I have connected a BT mouse to my EVO while running CM7 RC2 and, while it's not very functional, it does work. I have not tried a BT KB yet but if it works with games and the browser and suppresses the onscreen KB then I am all in!

Yes that is the Keyboard i am talking about.
very well made and well worth the money.
Yes i am talking about rooting with an aosp like cyanogenmod.
it made my phone into more like a pocket computer.
not sure on the game side let me know how that works out if you do try it it.
