My Pixel 7 is (alegally) not rooted, but running fasboot mode it used to point the bootloader version: cloudripper-14.5-11677884

I tried wiping to factory reset, using adb sideload but nothing worked until I used the Flash Android Tool and installed Android 15 beta.

Yesterday, after a warning message I decided to check and again, it went back to the cloudripper bootloader.

I cannot find out what is cloudripper and does anyone know why it keeps coming back to my phone?

The name of bootloader of Pixel 7 should t be Panther?

And how it changed by itself?

I will try to install it again and post here the photos after a factory reset?

I probably wasn't clear on that. Being on beta doesn't answer that question.

Childripper appeared before and kept the same name and version no matter what version I used.

Just after I decided to try Android 15 it came back to panther.
A few days passed and by itself, it came back to childripper.

So, when I installed Android 15 it installed as Panther not as Childripper.

Chilripper was before Android 15 and now on Android 15 its Panther, is this correct?

It's really not that big of a deal that's the name they are calling their bootloader and yes being on Android version such as beta 15 which is not official yet can give glitches, errors like your seeing, you can ask this question at XDA Forums as they are more tuned into these things but again I don't think you have anything to worry your looking at things that majority users wouldn't.
