My old phone used to save picture/videos with full dates (eg. "IMG_20120513_215914"), while my new one (the HTC One) saves them with just sequential numbering (eg. "IMAG0004").

Is there any way to change this? I much preferred knowing when my pictures were taken.

I don't know of anyway of changing the file naming convention used. However, the exif data of the pictures does record when the picture was taken, so you do have access to that. I know it doesn't help with looking at a list of picture names though.

And if you are on a computer you can display the date created and last modified date in directories.

He time, date and plenty of other info is already held within the photo's metadata. Do you really NEED it in the file name?

I don't have the HTC One, so can't see if there are any methods to change the image file names. However, I just instead CameraMX and it does include the date. For example, Photo_20131228_xxxxx. I'm not sure what the numbers after the date represent, but the date is present. Just an option if the stock doesn't show the date in the file name.
