camera says processing

Welcome to the forums. You might want to check to see if you something like HDR turned on or something like that. These are in your camera settings.

Also what do you mean "the picture I take isn't what I think I took"? Is it like a delay and the picture is maybe a second or so after you pressed the shutter?

Even with all the settings everyone mentioned above off, processing can still happen if it's a low light situation and you don't have the flash on. The "Processing" is meant to assist in removing the grain from your image due to the low light. It's normal and called for based on the circumstances. Guaranteed if you are outside on a bright day or in a well lit room you won't see processing appear
