Can I remove all of the Google apps?

I mean all of the ones that came on the S4 from the factory.

Like, Google Play books/games/movies/music/newsstand/services/text to speech?

Google+?

Are they really needed or are there better?

never delete any apps. always freeze or disable because you might need them for something down the road. I use titanium backup pro

In my opinion, all are needed. If you didn't, you probably wouldn't have gotten Android. Just freeze them if you don't want them. It's hard to find a way to reinstall them later on when they actually came with the ROM.
