I am making calls on my phone from the regular default phone app, wifi calling is blocked, and these calls are not visible on our actual phone bill online which is getting me in mucky water because it looks as if I am hiding something to my S/O and I am not!! So I'm trying to figure out what's going on
 
1. Cellphone bills don't normally list calls, unless you pay extra for a detailed bill.

2. Bring the phone into Verizon and ask them to please set up wifi calling for you. (If it's blocked because of bad account provisioning, only they can fix it. If it's something you forgot to do ... they get 100 people a day who can't find the "on" switch, so don't feel bad.
