When I look at call history and examine the call details for a call I only see incoming and outgoing calls for the number on the same day. This is the behavior on a GrapeheOS Pixel 5 and a MotoG Power with stock Android. When I do the same on an S22 Ultra with stock Adroid, the call history for the contact being examined includes many more days in the past. I'm not sure if this is ALL calls. An S7 I had in the past operated the same as the S22. Does the dialer app control this? I don't see any way to modify the behavior in the settings.

Welcome to Android Central! I think that's up to the individual dialer app. The behavior you describe on GrapheneOS is how it is on my Pixel 6 Pro with stock Android.

I think each manufacturer has their own flare on Android I do agree Samsung you view more history

You can't put a Samsung phone app on a Pixel but you can try others in app store but I highly recommend sticking with what came on the device.
