Can you turn "Sense" off?

Not that I don't like HTC sense, but I wanted to see what it would be like to use stock android. I tried to clear defaults under the manage apps setting but it isn't available. Is it just impossible without a root?

No. Sense actually replaces several OS components so no you can't turn it off or remove it without root and a custom rom. You can however install a different launcher like the one from Gingerbrad which is in the market.
