I have not found the setting that lets you change the wallpaper on the asus transformer.

You mean long pressing the home screen and selecting Wallpapers at the pop up screen?

There is also a plus sign ( + ) on the upper right hand side of the home screen that will bring you to the same screen where you can add apps/widgets, change wallpapers, etc.

I don't think honey comb allows you to delete blank home screens. I could be wrong in this though.
