I've gone through a test run on a old netbook, Acer Aspire One ZG5. Next for me will be an older Dell laptop.

Found a cheap SSD and put CloudReady on a Dell D630.

So far so good.

How's this holding up? Thinking of getting for an old work PC just for the hard drive capacity.

Can you save stuff to the Dell hard drive? Do you have to keep the USB drive attached once installed?

You can save stuff to the internal drive. You don't have to keep the USB drive attached if you install it to the internal drive.
