deleting home screen icons

it let me delete a few, but the other ones (Google, Gmail, Email, Calender, Message+, and a few others it wont let me long press and delete, i dont see the typical "trash can" or remove anymore. What gives??

Also, how the heck do you find all the apps?

Go to home screen in settings and change this if you want the normal Android experience.
