Solved - I lost almost all my home screen icons after updating to One UI 6.

I restarted the phone, checked for updates and searched the net. The solution was to
Go to Settings - Accounts and backup - Restore data - Choose my device name - Untick All at the top - Select Home Screen (note it also selected Apps) - Restore.

All my app icons came back. I had to remove and put back a couple of widgets that no longer displayed.

This worked for me.

That's why it's good to have your Samsung/Google cloud sign into your device, also have a Samsung Smart switch back up on your PC as it does more like photos/video etc..
