Differences?

Mmmm... not anymore. S6 Edge + and Note 5 have the same screen size.

The difference used to be that the Note was THE Phablet with S-Pen input while the rest of the Galaxy line (the Note is also part of the Galaxy) was different in specs and size, but now that gap has closed. The defining difference on the Note line is the S-Pen and more RAM to account for its functions, but you can have an S6 Edge + with the same screen size and mostly identical hardware, minus the S-Pen.
 
s-pen? is it just a stylus?

Basically, yes. But it's an active stylus, so that means it's very accurate when writing, has pressure sensitivity (different stroke sizes with different pressure applied while drawing/writing) and it has some added functions like selecting part of the screen to share as a screenshot, annotations on pictures and screen captures, as well as apps that focus on note-taking and drawing (it comes with a free license for Autodesk's Sketchbook and, of course, S-Note).
 
Oh wow....Looks like I need to get the note, that is really cool! You said it comes with Sketchbook, can you get adobe software like photoshop?
 
Yup, you can use Photoshop as well, although now that Adobe has gone with their subscription model, it's weird, they've broken up most of their apps into a bunch of free ones, but it's still there and it's so much easier to use with a pen than with a finger.

It's not the greatest experience because of the screen size, but it's not bad.

Sketchbook (if you can draw) is amazing, and so are the note taking features. I keep coming back to the Note line because of the S-Pen.
