Just wondering if different users can be set up on this NOTE.... like different profiles for different folks in the household...

Possibly.
If you can it would be under Settings>Users. I don't have my tablet on me right now, but I think it should be close to Apps and Battery in the list.

What version of the operating system are you taking about?

On the tablet the operating system is android 4.1.2

The original GN 10.1 (JB 4.1.2) doesn't have a multiple user feature. I believe that the GN 10.1 2014 Edition (JB 4.3) does.

Is there a way to upgrade the OS .... so I am able to set uo the different users.....

I have the 2014 edition. I don't have multiple user options yet.
