Do I have to update to Android 7?

Is it very important to update to OS 7? How do I disable the notification pop up? And how can I download it in the future if I do disable the notice?

You can defer the update for as long as you wish. There may be some security risk if you stay on an earlier OS version, but apart from that you are only foregoing the features of the later version. I have a Moto E/1 which I prefer to keep on Kitkat. Even without the occasional Lollipop notifications, I could check via Settings, Software Update any time if I did wish to download it.
