I'm new to the android world and I was just wondering how to update to JB 4.2 with my mac, I have seen some videos on how to do it on AT&T version on windows but does anyone know how to update the wind version with a mac?
AT&T doesn't even have the 4.1.2 out yet. If you want it, you gotta root it. All 4.2 roms are based on JB. If you root, it will be the same as the official, whenever that comes out. As long as you read up on it, rooting is very easy. It does look scary, but it's not.
Using a modded version of JB will give you access to the latest version of Jelly Bean on your Galaxy S3. However, there is a huge downside, you lose all the touchwiz features.
I just came back to touchwiz (JB 4.1) on my Bell GS3, I have been a long time Cyanogenmod user. There is nothing wrong with Cyanogenmod, I would suggest it to anyone who wants a modded phone, I just don't suggest it as the gain is too little to warrant on a Samsung device.

I don't use touchWiz at all so I don't mind. I heard rumour rooting your phone makes it faster and the battery last long, i'd like to get in on that. lol
