Will the Z2 support Google now launcher?

I haven't tried it, but I would say yes. I'm running Nova Prime Launcher and you don't require root to change launchers.

In point of fact, I can change launchers easier with Z2 than I could with my Nexus 4!

Not without either downloading the Google launcher or something like Nova launcher from the play store and then using either of them as your default launcher. Easily done and works really well

It certainly does, I'm running GEL myself. It works perfectly including 'OK google' on any screen. I have no idea why google wont let you install it form the play store.

I found it on the Google play store but it wouldn't let me have it. :-(

How did you get the OK Google thing to work? I have to press the mic icon

"ok google" works with a select few languages. Make sure your system or google search settings are set to US English or any of the few supported languages...
