I can't seem to find this anywhere. But does the watch continuously track ekg? Or is it only when you manually do it?

ECG as far as I can tell is manual only. Heart Rate though is continual.

Do you know if the apple watch continuously monitors it? Or the fit bit for that matter?

I don't believe any of the smart watches do it automatically since they all seem to require that you put your finger on a specific spot on the device to get a reading.
