I know Emoji was included in 4.1 but I can't find it.

Emoji is only built into the Default Android Keyboard. Since we have the HTC Sense Keyboard it won't have emoji and the only way to use emoji's is through a 3rd party app. If you receive an emoji it will display correctly, you just wont be able to send them without another app.
