Emojis changed from iPhone style to Samsung style after Galaxy S8+ factory reset

I have a Samsung Galaxy S8+ which is not rooted and has all Android and app updates installed. I have been using the phone for a few months but decided to do a factory reset when troubleshooting an issue I am experiencing, where all my open apps sometimes minimize while I'm task switching (that problem continues to happen occasionally, even after the factory reset). From forums, it looks like there is no fix for the app minimizing issue yet and others get it also. Anyway, after configuring my S8+ again from scratch, I noticed that I now have two strange issues: 1) The emoji shortcut that used to appear in the left side of the text entry box of messaging apps has vanished. 2) The style of my emojis has changed from the nice iPhone ones that I always used to have before, to the Samsung emoji style.

I used to use Gboard as my virtual keyboard before the factory reset and I have reinstalled it and am using it again after the factory reset. As far as I can see, everything is configured exactly the same as before and yet I am mysteriously without my emoji shortcut (the one that looks like a smiley face on the left side of the text entry box) and my emojis styles changed from iPhone -> Samsung. Any ideas guys?
 
Re Gboard... by default the emotional switch is off. Since you reinstalled it, you'll need to go to Gboard > Preferences and toggle on "Show emoji-switch key".
