I'm also on Google Fi P5.

Do I sideload the one that specifically says (T-Mobile, Sprint), or the one that has no carrier next to it?

I've sideloaded before, but it was on my 3XL, 3a, and 2XL, and it would always say, T-Mobile/Google Fi.
That is why I'm asking.

Sideload the TMo/Sprint file if you don't want to wait.

I'm pretty sure you won't break any major functionality even if you sideload the wrong version. Maybe some carrier specific things like voicemail or 5g coverage won't work correctly, but you should be able to make calls, send/receive texts (if using carrier agnostic text app like Google messages), browse internet, and use your carrier agnostic apps. I say this because I've changed carriers mid-month where I still have the old carrier update on the phone. No issues that I can remember. Of course, this is all done with an unlocked phone.
