So what happened?

Android File Transfer doesn't recognize my One.

I tried hTc Sync Manager & AirDroid2, both didn't work for me either. ATF, seems to be the best but for some I can get it to work.

I remember with One X, it shows up in Finder and let's me select Drive or Charge only. Is there a way I can get that back (in settings)?

Nope. It's not mountable as a volume in OS X.

I have been able to transfer all my data by using an android file manager downloaded from the play store. Then by uploading the needed files to dropbox and then downloading them on my macbook pro through the dropbox folder. it costs you some data charge but if you have a wifi at home, then you can do it for free.
