Thanks for your feedback, the fact that the update was for the scanner, must mean that they have recognised there is a problem with it. It'll be interesting to see if anyone else is facing the same issue as myself!

S7 plus here, no issues at all with the fingerprint scanner.

I've discovered it works if my finger is damp!
