Flash back to stock?

So I really think I want to flash to unbuntdroid. But If I don't like it, how would I flash back to the stock rom? I need to know if this is possible before i go any further. Please help an android noob out.

Make a nandroid backup. This is essentially an image of your phone's OS and if you need to restore to it, it will be the same ROM you were running at the time. Also be aware that any texts or calls in your log since then will be wiped out (your SD card will be fine though, so save anything you need to there).

Alternatively, if anyone has created a stock ROM, you could flash that over it.

All of this requires that you're rooted and running a custom recovery.
