Folders in stock Email app?

When using the stock email app on my Note 2, I can't find a way to put emails into folders. Is this feature available, or do I need to setup the email client using a different method?

Is there another option besides pop?
I tried to set it up using Exchange, but it would not connect. Not sure if I was not setting it up correctly, or if Google killed off Exchange support.
