I also have a galaxy s4 and in a side by size comparision with the s5, the s5 produces much more grainy and flat photos on the front facing camera. I have seached online and I have seen a few others commenting about this but most people seem to be very pleased with the camera. Maybe mine and some others are defective?

I have same problem, taking photo indoor is impossible. when i want to take a selfie, i have to go out door.
taking photo indoor has a super low quality of image and very have a noise on picture

iPhone 5S and Samsung S3 have already been used to compare. The results are found out that images have better quality than using S5. Using S5 taking a selfie, images have a way of becoming noisy or losing quality.

Ok so not only my front face camera is grainy and worse than my s4 but if you look closely while takin a selfie and tilting the phone upwards towards the ceiling you will notice your chin becomes wider. What I mean is that its got this nasty wide angle view. The Centre of your image is smaller than the sides. Check and let me know

I don't have S5 but planning on S4. The graininess in low light is due to high automatic ISO selected by the cam.

You could try the Night Mode that will try to average out the noise.
Second option is to reduce manually the ISO to about 200, pump up the exposure compensation (otherwise the pic may be too dark). That will decrease the shutter speed and increase probability for blur so keep the camera and subject very steady. It's best to fix the cam on a unmovable surface and activate the shutter with a voice command.
