Under Application Manager, then ALL...

What on that list can at least be disabled to save performance and battery? Any complete listing of what is safe to disable?

I wouldn't manage performance/battery life that way; it's tedious and you could really disable something that you may actually be using.

Instead, go to task manager (the default would be to long press the home button), tap the pie chart on the left, tap RAM at the top, and tap clear memory.
