Then you'll have to try some different APN until you get it to work

Something obvious has been overlooked, maybe there isn't good 4G coverage available. Can you get good 4G signal with a different phone on giffgaff? They run on O2, which isn't exactly the biggest network in the country.
Also, post a screenshot of your APN settings so we can verify they're set correctly.

Giffgaff has a great community support section. Have you asked anyone there? If you get too stuck you can ask an agent.
The following are the settings in my S10+ for giffgaff. Please check they are the same.
Giffgaff is an awkward network as they have no direct customer services and all queries can take 24-48 hours to get an answer and that time frame is between answers and further questions as well. So it can be frustrating to resolve issues. Often you will get specific advise using their community forum.
