Gallery question (picking up too much)

Is there a way to limit or specify what all gets picked up under gallery? Currently, it picks up all folder\subfolders with an image. That's kind of a pain (and too many folders) because it's picking up stuff like where I have different documents\scans where I have jpgs on my SD card. It would be nice to exclude certain ones, or at least be able to nest stuff in a certain way it wasn't picked up. I assume it just scans for any folder with an image file. Thanks for any tips!

Update - I was looking at it more. If I delete an album, does it delete the folder the images are in? Is it just creating albums automatically when the folder is created (and an image put in it) and then you can remove or recreate the album later?

Nope, just checked, if you delete the album it deletes the folder. That stinks. Any suggestions would be appreciated.

Edit: Should have also included QuickPic app which allows user to choose what folders to exclude/include. FWIW this is the method I use.
