I'm a total noob, and if this has been answered elsewhere, I apologize. I've read through the forums and people allude to the command line method as providing a lot more experience that can be useful. I was just wondering if anyone could provide more detail on how exactly this can be helpful.

Well, when you use the command line method of rooting, you're forced to learn how to use some ADB functions, as well as a partial layout of the phones filesystem. When you use a 1-click root, you don't learn any of that. Learning all of the stuff I mentioned above is useful in case something ever goes wrong or you want to modify files and push them back to your phone...

I preferred the command line method! This is coming from someone who never used adb shell before! The hardest part of rooting this way was learning how to install the sdk tool program that runs the adb shell (command line). But once that is done piece of cake!!
Tip: Copy & paste is your friend! Prevents you from making typing mistakes
