This may sound like a stupid question, but where can I find the files that are backed up daily.

I don't think they are backed up incrementally like a windows backup. I believe it's a full backup every time. And the files don't appear to be visible, much less viewed. They're automatically stored somewhere in your account and only retrieved when a restore is initiated.

Yup , you can see there's a back up , but thats about it

After reviewing all the details of Backup and Restore, I'm thinking that I can't restore individual files. It looks like it's designed to be a restore if you are doing a recovery of the entire system. I'm looking for an app that will allow me to restore individual files,or did I miss something?

What kinds of files are you referring to? The Google Backup feature doesn't give you access to discrete files.

I am still trying to find the Google Sheets that vanished. I am finally realizing that I they are gone forever. I'm going to look for an app that backs all the files i create.

I switched to iDrive for my android backups after having to restore a Google backup to restore a single txt thread that was inadvertently deleted. Couldn't find any granular restore and learned that the only way to restore it is to reset the phone back to factory default and restore the backup during provisioning. While it worked, it was a royal pain and the iDrive solution works great and allows that granular restore.
