Is there a way to take Google Now off the unlock screen or just turn it off all together? No telling how many times I've hit it on accident.

Not on the stock ROM. You can change the targets with custom ROMs.

I accidentally started GN St first, but like any electronic device, muscle memory took over and I have no problems now.
