HDR balances the exposures across the scene you are shooting, so it might make the brightest part of your photos in regular mode less bright, which could appeal to you less. You should also compare the photos on a different screen than your phone (maybe your computer?) to see what you like better there. HDR makes a big difference when there are huge imbalances in brightness (sunlight/shadows, lamps and candles indoors, etc). You'll just have to see what the results are in different circumstances for you.
