Help using Samsung Notes app on Galaxy Note10+

I want to start using the Samsung Notes app. I'm totally new to the app.
An example of the kind of task I'd like to use Notes for is to work with an app that manages my medical prescriptions. With that app I can get a list of my prescriptions and their status. Such as: the prescription number; the prescribing doctor's name; how many refills remain; the quantity that I can order. I want to use Notes to capture those items and paste them into another app.
