Help With Camera Settings

I know that the s7/s7 edge have been praised for their camera. While I do think it takes good pictures, i'm still not getting jaw dropping photos like others are getting. I don't know much about photography, so I could definitely use some help with the settings and modes.

The middle 2 pictures are ones that I tried to take of a sunset and the sprinklers watering the football field while I was taking a walk (not sure why one is sideways). The first and last are pictures that I would like to achieve if possible. In my pictures of the sunset, the sun seemed to overpower everything else. HDR is on. I tried using the selective focus mode to focus on the field and sprinklers, but every time I tried, it said a subject could not be detected to focus on. Can anyone inform me on what modes or filters I should be using to get better pictures?

Use the camera in pro mode and select a low ISO and use either the shutter speed or the exposure compensation to expose for the sky. Also shoot in raw. Then use photoshop or Lightroom.

You do realise the shot you want it to look like is not straight out of the camera, it's been post processed, also the sun is not directly in the field of view like yours.
