Thank you for the great writeup as I might give this a go. I know that you said that you didn't want to mess with setting up the Home Assistant app on your wife's iPhone but did you set it up on your phone? I've never used it but since Google home is not what I had hoped and because I am going to replace some Google cameras, I think this might be the way to go.
