How can I stop the "Google Keyboard" from auto changing text to emoji

This is using the keyboard that is made by Google and available in the Play store.

I noticed that recently if I swipe/gesture type certain words like star, happy or circle, it will automatically change into the emoji instead of the actual word. This is very anoying and I want to turn this off, but cannot find anything in the setting that would be doing this. I have a video of this, but it only shows it happening in the Google app, but I have tested it in non-Google made apps and it happens in them too.

Can someone please help me to turn this off.
