Everything I hold the home button and the power button down to screenshot, it says “System UI has stopped” How do I fix this so I can screenshot again.

You'll probably have to reflash the ROM. Since it's a Samsung, it's pretty easy - see [Samsung] How to flash Stock ROM via ODIN. I'd suggest that you back everything up first, because flashing the ROM wipes all your data. See Backing up an Android Device.
