How come only emails of contacts transferred over, but no phone numbers?

IIRC, when it was asking for individual permissions, I may have denied Contact permission when I used whatever Google utility automatically calls when I switched from an Samsung Galaxy s4 to this (Tmobile). In addition to why it did this (I'd like to know for future use perhaps), any way to initiate another restore, but to also get phone numbers in as well?

I tried going through the phone settings, but all it transferred over were the email addresses. I'm guessing that's all the backup in the cloud contained?

Is there a way to delete ALL contacts from just the phone? Without any phone numbers they're more of a chore than being useful. I can just manually enter in a select few that I know I'll use.
 
I would one your Gmail account on a computer. Click contacts (on the top somewhere) then delete the ones you don't want. Restart your phone. And I think there will be the contacts you kept still there. If not another method is factory reset and sign in with that email
