How different can Chrome OS be on each device?

My workplace uses Microsoft Intune for BYOD, I want to buy a new Chromebook. My tests show that all Microsoft apps work on the Chromebooks I have tested with the exception of Edge and the Intune browser. They work on some. Edge loads but crashes on one, and is not comparable with others, I have tried C434, C433, Flex 5, C302 with no luck. I'm told it works on the Duet. Is it just that Microsoft need to update a compatability list? Or is Edge never going to work on these devices. Apart from hardware drivers I though Chrome OS should be Chrome OS across the board. what am I missing? (Apart from Microsoft Edge)

Part of the problem is probably the CPU. My understanding is that Android apps can have more compatibility issues on Chromebooks running Intel (or AMD) CPUs compared to ARM CPUs (like the Duet's Mediatek Helio P60T), just like apps could have problems on those old Android devices running Intel Atom CPUs.

I can see the difference, because I've played games on my Duet (notably pinball games) that are much smoother there compared to on my Pixelbook (with a Intel Core i5).
